Dhuan Ghosht (Smoked Meat)

Ingredients

Beef      1 kg

Yogurt   1 cup

Raw papaya(paste)  2tb spoon

Ginger  1t spoon

Garlic  3t spoons

Fried onion   1/2 cup

Mixed spices (garam masala)  1/2t spoon

Turmeric   1,1/2t spoon

Red chile   1t spoon

Salt to taste

For Gravy

Oil  1 cup

Onion  3 medium

A piece of coal

Recipe

Mix all the ingredients with meat and leave it in refrigerator for marination for about 3 to 4 hours. All night would be best.
Put oil in the pot and onion as well. Fry till light brown.
Then add the meat and stir well, for atleast 15 minutes.
Now add a glass of water and leave it on a low heat for slow cooking till the meat is tender.
Then cook it till water dries at high heat.
Put the coal on fire till its red.
Put a silver foil in the center of pot, place the coal on it with a drop or 2 of oil and put the lid back.
Smoke the meat for 5 minutes, remove the coal and garnish with green chilies and coriander.

Enjoy with roti or naan bread :)
